Hello, PMC! Today, I'll tell you how to make a GOOD roller coaster in MC. Of course, we're all able to connect rails and plop a minecart on it, but that's not a roller coaster, per say.

STEP ONE:
First off, put supports in so it looks like this:

Not like this:
undefined

STEP TWO:
Try to model a real roller coaster, so you know how tall to make the hills and make it look good. For instance, say you were wanting to build a roller coaster and you live in Denver. The only big amusement park there is Elitch Gardens, so use a roller coaster from there, such as Twister II.

STEP THREE:
Don't make the track only 1 block tall. And if the roller coaster ever does go on the ground, please, put the track material where the ground would be so it doesn't end up looking like this:
undefined

STEP FOUR:
This one can also go for the coaster above: Put the roller coaster in the middle of an amusement park, a wonder of nature, or even the middle of nowhere. NOT A VILLAGE.
STEP FIVE:
Please, don't make the coaster go really fast out of the station unless you're modeling it after a LIM coaster. Make it like literally every other coaster besides an LIM in the world; IT MUST HAVE A SLOW LIFT HILL. MAKE IT FEEL LIKE A CHAIN LIFT. (Y'know, the "clickity-click-click-scary-first-hill-part that makes you feel like the whole thing's gonna crash." Obviously you won't actually be able to implement a chain, but make it so one powered rail pushes you up, and you barely reach the next powered rail.
STEP SIX:
MAKE SURE THE ROLLER COASTER ACTUALLY WORKS. I CANNOT STRESS THIS ENOUGH, THAT'S WHY IT'S IN CAPS: THE ROLLER COASTER CAN NOT STOP MIDWAY THROUGH IT'S SO FRUSTURATING WHEN IT HAPPENS AUGHHHHHH
STEP SEVEN:
Have good scenery. Trees will suffice, and even adding elements that add a theme to a roller coaster work REALLY well. Remember September's Roller Coaster Contest? Remember the Halloween-Themed winner? Not only did it win for its great effort and realism, but the creator(s) gave it a theme. Not only just a name, but chambers, dim lighting, everything. Very Halloween-y. Judges likey. Judges likey very much. Public likey very very much.
STEP EIGHT:
Have some sort of a waiting-room where guests can wait for the next available ride. Preferably indoors, but outdoors works as well.
STEP NINE:
Make the roller coaster more than 10 seconds long. No one likes a simple, One-Small-Hill-And-You're-Back Coaster.
STEP TEN:
MAKE IT FUN. MAKE IT HAVE MORE THAN ONE HILL. ADD A LOOP. THIS IS THE MOST IMPORTANT STEP!! FEEL FREE TO SKIP ANY OTHER STEP BUT THIS ONE MUST STICK AROUND FOR EVERY ROLLER COASTER IN EXISTENCE EVERRRR
And, there ya have it! How to make a good MC roller coaster!
(Note: I apologize if I offended any of the builders of the roller coasters above. This was for entertainment/educational purposes only.)
