There is a guy on dA (Deviantart) who has some pretty kick ass idea's for mobs in minecraft!
Here are some of his idea's:
Phoenix :
Phoenix
Mob Type: Passive
Health Points: 20
Attack Damge:
Spawn: The Nether
Drops: Phoenix Ash* 1, Phoenix Feathers* 0-2
Experience: 4
Phoenixs are the Nethers cute little birds. Unlike most birds they dont drop meat, and cant die in lava and fire. They spawn in Nether castles in groups of 20 but will sometimes spawn in other parts of the nether.
*Phoenix ash is what phoenixs drop when killed, but not as a item. the ash will take 2 minecraft days to hatch into a phoenix chick. You can mine the ash and place it where ever you want or use it in potions.
**Phoenix feathers are like chicken feathers but orange witha yellow tip and can be used to make flame arrows.
Flamingo:
Mob Type: Passive
Health Points: 8
Attack Damage: ---
Spawn: Swamp
Drops: Pink Feathers* 0-2, Raw Flamingo**1, Egg 1
Experience: 1-3
Flamingoes are the swamp equivilant of the chicken, but are larger and can actually fly (unlike the chickens, which glide).
*Pink feathers are like normal feathers but pink instead of white and can be used to make poisoned feathers.
**Raw flamingo is like raw chicken but larger, and takes longer to cook.
Baboon:
Mob Type: Neutral
Health Points: 20
Attack Damage: 6
Spawn: Plains/Mountains
Drops: 0-2 Raw Chicken, 1-3 Sticks
Experience: 3
Baboons spend their days in packs, attacking chickens and stealing food. They'll steal food from the players chest, and if the player drops any food they'll snatch it up in a second. They'll only attack the player if the player attacks one of them ,like wolves, or if the player holds a piece of food for a minute or more and then eats it.

Hamster
Mob Type: Passive

Hamsters are small, cute and not very usefull. In the wild they just run about squeeking and ruining crops. However, you can tame them with seeds and once trained they will alert you with many chirps and squeeks about a harmful mob before they sense you.

Attack Damage: 4 (easy), 6 (normal), 10 (hard)
Spawn: Abandoned Mines/Caves/Dungeons
Drops: 1 Ore*, 1-3 Soul Powder**
Experience: 2-5
Ore Traps. The most stealthy mob ever. Even though they can be found roaming abandoned mine in groups of 5-8, they usually hide among real ores, waiting for a miner to come along and try to mine it. Once someone tries to mine it, the Ore Trap will jump out, grow to its actual size (when they're not waiting, they're twice the size) and attack. You're probably thinking how someone would be tricked by an ore with red eyes and pointed teeth, but whilst waiting they make themselves look like real ores. They come in different colours (because there are different ores) and are extremely rare. The strangest fact about them is that like actual ores, different Ore Traps are rarer then others. If you throw Animation Potion at a normal ore will create an Ore Trap.
*Depends on what ore they look like. Even though they'll drop one when killed, they continuously drop them once tamed.
**Soul Powder can be made from soul sand used to make animation potion.

Swordfish are the 'warriors' of the sea. To cause damage to the player, they have to charge at the player straight on, and hit the player with it's sword like nose.
Merpeople
Mob Type: Passive
Health Points: 20
Attack Damage: ---
Spawn: Atlantis Village
Drops: 1-4 Ink Sac, 0-2 Fish
Experience: 0-2
Merpeople are basically passive creatures that live in Atlantis. Their buildings are made of coral blocks and wooden planks and they have farms of seaweed. Once you defeat the boss of Atlantis you'll be able to explore Atlantis and you'll eventually find a tunnel made of coral and glowstone with a wooden door at the end of it. Once you go through the door you'll find the Atlantis Village.
Sea Cow

Health Points: 10
Attack Damage: ---
Spawn: Coral Reefs, Ocean, Atalntis
Drops: 0-2 Leather, 1-3 Raw Beef
Experience: 1-3
Sea cows are the marine subspecies of cows. The obvious differences are the colours and fins, but the other differences are that the ears are smaller and (unlike cows and mooshrooms) they have no udders.

Coral Traps are the aquatic cousin of the Ore Trap. Instead of pretending to be Ores, they pretend to be coral blocks and if someone tries to harvest them with an axe they'll attack. They are even rarer then Ore Traps, and you're only likely to see them once. If you throw an animation potion at a coral block it will create a Coral Trap.
*Depends on what colour they are.

Diamond arrows cause twice as much damage as a normal arrow, and Gold Arrows can cause burning if they hit undead mobs (zombies, skeletons ETC.)
Frag Bombs: Frag bombs are basically the normal bombs of all the bombs. They and all the other bombs have the same explosive range as a creeper.
Diamond Bombs: Diamond Bombs can be used twice, unlike other bombs.
Sticky Bombs: Not only do these bombs take twenty seconds to explode (instead of exploding instantly after touching something), but they stick to anything you throw it at, even mobs and other players.
Blaze Bombs: Once they explode, Blaze Bombs will cause an ten-by-ten sized fire, burning anything in its way.
Diamond Bombs: Diamond Bombs can be used twice, unlike other bombs.
Sticky Bombs: Not only do these bombs take twenty seconds to explode (instead of exploding instantly after touching something), but they stick to anything you throw it at, even mobs and other players.
