Before starting a bigger terrain you should always do some general planning. Here I will explain one of the ways I usually do it if the rough shape is not already given through something like worldedit/voxel or something similar.

The most important thing is knowing what you want to do. You can just start building instantly and go on as you build but that may not always have the result you wanted to have in the beginning. So the first step is imagining what you want to build and that is a step I cannot really help with since it relies on your mind and not on my tips, sry :P

Afterwards I use some general lines to make the shape of the terrain I want to have. In this example I chose an area of 50x50 blocks and want to build a canyon that goes through a mountain with one side of the mountain having a slight overhanging part and the other side having only a medium height.

This time I will start with showing what my planning looks like, although this time I used some more pointers than usual but in the beginning I started with something similar to this planning.

You can easily see the high mountain on the right side with a canyon going through the area a bit diagonally and the left side having some smaller hills.

In general I started with those lines in the front that are parallel to each other and have the general shape I wanted to have. With these you can already see roughly where the lowest part of the canyon will be and direct the canyon in the direction you want it to be and I used these to set the general height each area should roughly have. (orange wool lines)

In the next step I build some more indicator-lines that are right-angles from these beginning lines. With these it is simpler to set the general shape of the canyon more easily and where exactly turns etc. should be.

With these 2 done you can start to plan some more on how the shape of the mounrain in my case should be. Where the fronts position of the overhanging part is or just indicate which general shape the mountain should have at a certain height.



Afterwards you should have a rough shape of the terrain you want to build. For everything where you already have a more detailed idea or that takes some more pointers so that you can remember later what exactly you wanted to have there you can make more lines in these area. I used this for the end of the canyon and the beginning of the overhanging part.




This is my method of planning a mountain area of terraforming. If you want to make a plains area then you can use the same general idea, the only thing that is not really necesarry is the second step which is more important in defining the direction of the canyon in my example. If it is a plains area you would rather start with a general shape of several height areas (compare to third step here) and then connect them with straight lines that indicate where the height should roughly change.
