Wether it's that you've never seen one of don't believe in them, well here ya' go!
I see spider jockeys all the time and have gathered quite the ammount of photos, they do look glitchy because the spider and skeleton act seperately but you can see that the skeleton is sitting and that it does glitch over onto the spider's back.

Additional Notes
- A Skeleton does not have a 1% chance of spawning riding a Spider - a dungeon with a Spider spawner can create a Spider Jockey, but a Skeleton dungeon cannot.
- If the player exits a game and then returns while a Spider Jockey is spawned, the Skeleton will stop riding the Spider.
- The world can create up to 3 Spider Jockeys at a time, but the spawn percentage is still 1%.
- When a Spider Jockey rides a minecart, the Spider will suffocate and the Skeleton will remain.
- If you can derail a Spider Jockey that is in a minecart, the spider will somehow MOVE the minecart in any direction it wants, just at a painfully slow crawl. The skeleton can shoot you freely.
- Spider Jockeys are very easy to find when using super-flat.
- If the Skeleton on the Spider Jockey is shot by another Skeleton, it will jump off and leave the spider.
- A Spider Jockey does not have a 1% chance of spawning from Spider or Skeleton Spawner Eggs.
- Click to revealNot only can a Skeleton be riding a Normal Spider, but it may also ride a Cave Spider if it spawns close enough to a Cave Spider Dungeon.

I always believed they were real though and I read about them on the Minecraft Wiki. They're pretty cool! :P
They are more common than pink sheep really.
