it's a game. don't think about it too much because if that is a problem, why isn't it a problem that it's a square world and that there is a big dragon in an other dimension where you can go with a black portal

They are a species with 1 sex in the game universe, this has already been explained by notch before. There is species that are like this in real life also like snails and some species of lizards where there is not 2 sexes.
Besides it is a video game with exploding green things, are you really getting so worked up over the sex of boxy cows in a game where you place and mine cubes.

All cows in the game must be female, because they all produce milk. Now, since two female organisms can't procreate traditionally, they must have evolved in such a way that allows them reproduce without the need of fertilisation. This would explain the lack of a male cow, as they are unneeded, and would also explain the odd method by which the cows mate (If you must know, they nuzzle their muzzles together).

All breedable Minecraft animals are like that, assuming they have two sexes.
Let's say you have three pigs: Pig A, Pig B, and Pig C.
You can breed Pig A with Pig C, and then breed Pig C with Pig B, and then Pig B with Pig A.
If Pig A is female, then Pig C must be male, right? And since you can breed Pig A with Pig B too, Pig B must be male. But then, if Pig C and Pig B are both male, why can you breed them together?
Let's say you have three pigs: Pig A, Pig B, and Pig C.
You can breed Pig A with Pig C, and then breed Pig C with Pig B, and then Pig B with Pig A.
If Pig A is female, then Pig C must be male, right? And since you can breed Pig A with Pig B too, Pig B must be male. But then, if Pig C and Pig B are both male, why can you breed them together?
