There are approximately 3.097 diamonds per chunk. There are 14.062 trillion chunks per world. That makes approximately 43.55 trillion diamond ore blocks in every minecraft world. If you were to mine all of those with efficiency III, unbreaking III diamond pickaxes while you had haste II, it would take you 69,003 years, and you'd have to go through about 9.29 billion pickaxes (which would cost 27.88 billion diamonds). You'd also amass about 217.76 trillion experience points. You'd reach experience level 6,599,385.

It's kinda randomly generated, so you can't get an exact number without have a program count them for you, and no world would have the same amount.
If I wanted to figure it out, I would divide the maximum x and z coords in my world by 16 and then multiply the percentage spawn rate of diamonds by 16 and assume that that's a close guess. Sorry kinda hard to explain.
