How do YouTubers record their videos?
No this it not about the software but rather the technique they use. I was always wondering but never bothered to ask until now since my channel has reached 400 subs!
Do they record a 2-3 hours video footage and than cut the boring parts and parts where nothing happen or do they start/pause when something interesting is about to happen or what are your ideas? I want to get better, I need to get better and I think this would help me in that.

I guess like any movie, film as much as you can and then edit. It's a lot easier to work with TOO much footage than not enough

Yes I have nearly everything set to lets say MAX so the video quality is great and since I dislike 30 fps... ugh just looks so wrong since YouTube has made 60 fps videos available. I use Bandicam for my recordings which works just fine but if lowering the bit rate and fps at which I am recording will lower my file size than be it.

I play Overwatch with a group of people that just started on YouTube, I recorded a 1920p X 1080p video at 30fps with OBS for almost an hour and the file ended up being just over 1GB, so I would say 10GB is a bit too much for something like that. I'm not quite sure why yours would end up that large o.O

It depends on the video bitrate. Raw footage typically has a high bitrate (30-50Mbps or so for 1080p60) to preserve as much visual fidelity as possible. You were likely recording at a bitrate suitable for streaming, which is around 2-5Mbps.

A bit too much, I made a yt video on Minecraft with full HD, and 20 minutes long. Though Overwatch has better graphics, I still say thats a bit too much.

I'm guessing they record a couple hours of footage and cut it down. Playing and pausing the recording software would mean they would miss some funny and accidental moments.
If I had the motivation and the effort to become a YouTuber, I'd do that.

But how much does their files weigh in size? I just tried it, a random Overwatch video that was around 10 min long, Full HD size tho(1080p 60fps) and it took 10gb, is that a normal size or a bit too much?
