Minecraft adventure map NBTedit or Custom NPC'S?

Yeah so im making a adventure map and I i dont know either to use Custom NPC'S or use NBTEdit or i suppose i can use both??
Ideas anyone?

Level 16 : Journeyman Cake

NBTEdit is different from custom npcs so of course you can use both
