does anyone know of a way if you have log block like oak log, can you change the texture on only one side instead of it applying to the four sides of the log so like you can have a wood knot on only one face of it

Your best bet would be doing random Optifine textures for doing something (like a knot) on a oak log. Unfortunately the only way it would work is if you used Optifine. I dont how to make a texture random when loaded with Optifine. But if you do decide to do this a simple YouTube video could probably help

I've been using Mr.Crayfish's model-maker that was made for making models for Minecraft resource packs.

Do you mean a 3D model, like in Blender? That's cool to know...thanks! My answer was based on looking at a standard texture pack, which only has one image file for each log.

If you make a model you can select the textures for all sides of the block, therefore, you could have one side with a knot in it.

I don't think you can. There's only one image file and it's applied to all sides.
