This seems great, i might do a rack mount server system once I save up enough! I just think maybe i should have one for os one for server files and one for backups, 60gb ssd for os maybe?

You will only need one SSD for your OS and server, OS should take less than 10GB, then the rest you can use for your Server, then use the HDD for your backups. You only need 1 for your OS and Server, you are not going to need more than 1.

I would only get 1 SSD, then I would get a HDD as your secondary storage

Dual ssd, one for os and another for files ie MC servers, but I would probably get one 2tb hdd

It would make sense to get a smaller SSD for the os then, as that you said, one for OS, then one for Minecraft, I you probably will only do minecraft server, and probably wont install anything else, so I would go with a smaller SSD for your OS.

I would agree but it is very cheap to get larger amounts (240gb) for an ssd per gb. This is just hypothetical but I do agree about the smaller ssd for the os but ssds for minecraft servers are extremely good, or at least I have tested it.
