Open your jar with 7zip or an equivalent, go into the lang folder, the easiest to edit is the en_US file open it in notepad then you just replace the things youd like with custom ones save it and it should be good :D

It wont work if you do it through a texture you have to manually change them or use a modloading program for any language changes to take place. :P
