I don't know what your stand on griefing is, but I would like to share one point with you:

servers that enable the creative game mode (flying, items spawns, one-hit block breaks, etc.) are bound to be hit by griefers harder: even more so if they don't have a whitelist! This isn't a knock on any server that do this, it's just a fact.

Personally, I would look for a server that allows for the unlimted item spawns and flying. So basically the survival mode, with access to the /i command and flying.
