Before I get into why, I better explain what FOV is. It stands for Field OF View. It's the angle that defines the boundaries of your vision. The normal human vision is a little over 100 degrees. Probably around 130 degrees. Have you ever gone to the options menu in Minecraft, and experimented with the options? Did you ever come across the FOV slider next to the difficulty level?
Ya see, that slider changes the field of view the game is rendered in. Now, if you play on the normal FOV level, keep reading. If you don't, you can leave now if you wish. With the FOV on low, it is like tunnel vision. You don't have what is called peripheral vision (The part of your vision that is "the corner of your eye"). So on low FOV, you can't see what is beside you very well. Only what's in front of you. With normal FOV in Minecraft, you're using only about 70 degrees of vision. A little over half of real life. That's ridiculous.
If you use Quake Pro FOV, then there's no doubt you'll have peripheral vision. You'll be able to see things beside you, the ground directly in front of you, and the sky above you, without even looking in that direction. This not only makes you better at Minecraft, but better at First Person games in general, because your eyes will be trained to recognize movement on a screen, or really anywhere else. In your everyday life, you will better be able to see things out of corners of your eyes.
I know how hard it is to adjust to this new "stretchy look". It's very difficult for most, and may hurt other's heads at first. If that's the case, raise it a few degrees every day, and work your way up. Eventually, the normal Minecraft FOV will seem like you're looking through a telescope! Trust me, adapting is worth it! I was able to adapt very quickly. Just try playing for 10 minutes with Quake Pro FOV. Just try it, and you'll be used to it in no time.

I was looking around just to see opinions about FOV I used to play on 100 FOV, but I gave lower FOV (76) and to be honest it feels like the extra things are useless, (just my opinion) and it feels like there is more accuracy when you have lower FOV.
The other day... I was playing Tekkit and messing with some coffee, and after a few cups it raises your FOV, right? Of course, then I decided it would be a genius idea to turn the FOV all the way up, and that, combined with the speed effects and nausea effect... Pretty trippy. Then I tried killing creepers at hypertrip speed with my nanosaber :P
I agree I haven't normally played with high FOV in the past but now that I've tried it it seems to help a lot. Only problem is adjusting to the fact that things look further away, especially the ground if you look down. It does take some time to adjust to the illusion of a difference in block and player height.
