I don't know what "Experimental Gameplay" is, but you can download the latest snapshot in the launcher. It has always been a somewhat hidden feature, but the new launcher makes the feature more obvious and straightforward.
1. Start Launcher
2. Click Installations
3. On the right side under Versions, click Snapshots
You should now see the snapshot listed. If not, then follow these steps.
4. Above the list, click new.
5. Type any name of your choice
6. Click Version drop-down list. (Should appear as "Latest Release"
7. Click the snapshot of your choice. The topmost one is the latest one.

This is bedrock edition. Betas are different on it. Experimental gameplay is for things that are almost ready, but might still be a little broken

Experimental gameplay is for mostly ready things, like structure blocks. If you want to test 1.16, get in the beta
