What's the best zombie system for villager trading hall?
Hard mode. I already have my trading hall set up. It's a square, with an easily accessible exterior perimeter. Right now I have it open so zombies can access villagers when pistons are dropped, but somehow they don't attack them much. What should I make instead for better efficiency?

Rather than relying on natural spawns (which is what it sounds like), get a persistant zombie in a minecart with a Sharp5 Diamond sword then use tracks to bring it next to specific villagers you want to convert & cure.
This will speed up the process because A) you can force the proximity, B) the system can run 'continuously', C) [big one] the top end sword will kill the villager in fewer hits.
A bigger modification would be to bring the villagers to the persistant, armed zombie (which can be located sufficiently distant so as not to interfer with trading with the other villagers.) The villager being improved can then be killed before being returned to the hall.

WRT the sword killing the villager:
"When a zombie kills a villager, it can turn the villager into a zombie villager, depending on the difficulty: 0% chance on Easy, 50% chance on Normal and 100% chance on Hard" per https://minecraft.wiki/w/Villager#Zombie_villagers so as long as you're playing hard mode there should be no problem
WRT getting the cart to stop:
A lot depends on the design of the hall/conversion chamber, but unpowered powered rails are usual. [Then power them to remove the zombie in mincart.]
Given that repeated zombifying/curing no longer improves trades [as of 1.20.2], simply manually reconfiguring the rail may be easy enough.
I've not bothered with this mechanic as emeralds are not something I find a limiting factor, but LogicalGeekBoy's Villager Trading Hall Tutorial with Zombie Discounts | Minecraft 1.14/1.15 (Java Edition) was well regarded (Don't know how well it will have survived the changes since, but you migh look through his channel)

Turns out the top end sword was a liability -- it was easier for me to stop the cart and let the zombie have all the time it needed with each villager lol
