So I'm looking into rebuilding a structure with other blocks instead of stone bricks, and I'm wondering is there a way around it instead of completely rebuilding it?

Use mcedit. Will get it done in seconds

You can use World Edit and change the block to the new one you want. And then if theres bits you don't wanna change then change it to the block you do want then just place the old block instead. Hope this helps
