I use BlockBench to import the models into the game, but I model and texture in MagicaVoxel.

I'm using Blender for general modeling and Blockbench for Minecraft json models.

Feel like Blender would be overkill to use for just MC, but for other 3D stuff it's great, used it in school a bit.

Yeah, Blender is really powerfull tool good for not only just modeling but also rendering and animation ^^

kinda?? idk its kinda easy for me since ive been using it for a couple years now but when you start using it for the first time its really annoying to get used to. I'm still learning. It's more for Anime models but i've seen people making cars and stuff in it. it's pretty cool. here is one of the models i've made using it, he's a minecraft youtuber, NerdieBirdie. (we're friends kinda) but yeah. its different. Oh and most of it is in Japanese, even if you do get the english translated version, which is annoying.
