I can't really "teach" you in real time, but here's my tips.

1. Depth.

It's important. Probably the most important thing. Stairs, fences, slabs, window panes. But not just blocks that aren't solid cubes. Actual variance to the building: archways, parts of the house set back, different floors, porches, overhangs. Etc.

2. Palette.

Colour palettes (basically, a set of colours) involve "a lot of artist mumbo jumbo that's difficult to explain, especially when you're a 20-year-old self-taught artist who draws anime dragons". So forget all that. Here's what you need to know as a Minecraft builder.

Figure out what looks good together by experimenting. (Most wood (brown) and cobblestone (grey) looks decent, for instance.) Minimal-textured blocks like clay don't usually look great with detail-textured blocks like planks or chiseled stuff, but try it anyway if you want.

Pick 2-3 main colours/textures for your build. Dark brown and light brown (oak wood and dark oak wood). White and grey (quartz and stone). Black and green (coloured blocks). Texture is important too, factor this into your palette choosing (oak planks and oak bark are completely different and count as different blocks for the purpose of your palette).

You can use highlight colours. A green window here. A rose bush there. Try to use the same highlight colour consistently (green leaves as bushes with green-tinted windows, etc).

Or if the black was mitigated by other colours and textures. But it's just the roof. An entirely black roof with no variance or distribution. This doesn't look right.

3. ...Artist stuff.

Honestly all this will come naturally if you're an artist already. The basic stuff you learn as an artist is universal. What looks good, and what doesn't, is much easier to figure out. If you're blind to this stuff (you looked at the bad examples I showed you and can't easily see what's wrong) all I can suggest is a lot of practice. It gets easier.

Maybe download a bunch of builds, and as you go through them, try to figure out why you enjoyed some more than others, why some seemed better. These things can be hard to put into words, but it can really help your own building.

Extra: References.

As many people as there are who would laugh, Minecraft building is an art. It's architecture and map design with a dose of colouring/texturing all mixed together. And the first rule of art: Use references. Whether you're a traditional artist, sculptor, architect, or Minecraft builder. References.

If you're building a castle, and don't have "Minecraft medieval castle" open in Google Images already, you're doing it wrong. In fact, take it a step further and look at images of ACTUAL medieval castles.

This doesn't mean steal peoples' designs. It's just that, you probably can't create things from memory, especially if you have no experience (and don't know what you're trying to create looks like!). References are meant to guide you towards expressing what's in your head. And it's okay to take inspiration. Just don't block-for-block copy someone else's build.
