How can I make each piece of leather armor look different?
I know that as of late every piece of leather armor looks the same with a different color slapped on...
Is there any way I can make each piece look different with Optifine? Thank you for any help in advance!
(For example, I'd like a full set of red to look like a firefighter, and a full set of white to look like a medic)

You can make custom textures for the models you want and use optifine's custom items texture technique to apply the texture based on renaming the items in game.

You most likely would just have to make each class a specific armor, like firefighter - leather armor, medic - iron armor, etc. and then just edit the textures in a resource pack accordingly. I don't think there is a way to directly edit the textures of specific colors of leather armor. Maybe something with Mcpatcher and CIT could work.

you might have to use a resource pack to do it as it's would be a custom texture for each piece
