I assume by "making vanilla modpacks with datapacks" you mean combining several datapacks and playing them at once. If you are interested in writing your own datapacks instead, let me know and I'll help you out!
There is currently no way of checking compatibility with datapacks, but here are the possible issues:
-poor code quality (executing things as all entities instead of tagged ones, for example)
-You don't want one datapack to mess up another's tracers/dummies
-overlapping scoreboard objectives, teams, and dummy players, overlapping "/tags"
-overlapping resource pack model files or item data values
-custom items are usually unbreakable carrot-on-a-sticks or swords with custom durability. If two packs use the same durability value, it will screw up
-overlapping worldgen/structures/mechanics (mob spawning or custom block placement)
-overlapping custom crafting recipes
Most of these possible overlaps are prevented within major datapacking groups (organized through discord channels) like DPH or MCDP by assigning namespaces on scoreboard and tags and tracking what data values each pack is using. However, any packs without a namespace or with custom items that are not submitted to one of these groups may cause errors. The two groups also hardly coordinate, so they might have errors with each other too.
Here are some discord invite links to the two servers
The Datapack Hub (DPH): This server is more "professional" but contains a lot of useful information and the most organized packs. However, most of them are too ambitious and never get completed.

Minecraft Data Packs (MCDP): This server is not quite as organized or professional, but contains many smaller and more useful datapacks. Some include custom shelves you can place items on and a survival armor-stand poser.
