There are a few really annoying things that can happen:
Get killed by a golem because you didnt tower fast enough
Cant find a bastion/fortess
The dragon doesnt perch
Bad pearl/rod drop rates
A lot of things can go wrong in a speedrun

By "reset points" I am assuming you mean something like checkpoints, usually there arent, but it depends on the category of speedrun you are doing

It can after a while, but its pretty fun when you get a good seed
