I would make the technical systems more exposed to the average user. This would include adding command blocks, structure blocks, barriers, and mobspawners to the creative inventory and adding an in-game text editor and file viewer for editing functions, loot tables, and other files.
If you are one of the few bedrock edition players, I would completely remove the marketplace and replace it with a content-sharing system open to the public. Anyone could offer skins, resource packs, maps, etc. for free. The monetization of community content is really ruining the entire minecraft community.

Way more settings, enabling, disabling things like: certain items, blocks generating, type of trees (disable big/small ect). I would also give gravity to trees.

This doesn't need to be an update/mod. There are now many vanilla "mods" written in command block code in development, such as The Tempest's Box, Magicraft, Agriflora, Celestial Vanilla Modpack, Fear The Night, Might and Magic, MythsOfTheAncients, and many more.
