What's your favourite blocks to build out of?

I'll start: ALL the wools, I like them because they're easy to get and come in fun colours.

For utility cobble (particularly when the build is large enough that cat-in-place makes sense).
For aesthetics it varies greatly by the site and look at which I'm aiming….

Cobblestone, this works on allot of things, is easy to get and its just a classic :)
But i also realy like the new Pale Oak Wood Set

Stone bricks, spruce planks and logs
Birch planks i like the brightnes
Cyan terracotta or spruce planks
Any copper blocks, because there are so many slightly diffrent ones and its not hard to texture.
and they just look good as rusty metal, witch ig is just what they are.

Wood and stone brick variants. and obviously glass panes. I never really stretch out of that range but soon I will, because I kinda like prismarine.
All kinds of stones to build big castles! It's solid, it doesn't burn, and it's fun to build! (this is a little one)
bricks, a classic but beautiful and cozy block, almost all of my buildings i made in my survival base uses bricks
there's alot of blocks of any color and variety and i use them from time to time, but bricks just makes my survival base feel like home
