You'd use /setblock (coords) stone_button [value], with a value from 0-5.

  • 0: facing down
  • 1: facing east
  • 2: facing west
  • 3: facing south
  • 4: facing north
  • 5: facing up

That wouldn't work on bedrock sadly, as bedrock doesn't use block states
