How can a make a realistic thatched cottage?
The best I have been able to do is use hay bales and it looks awful!

If you are not willing to try out modding, then the best way would be to try a change of texture/resource pack. For example, this one has a medieval theme :

use planks and hay maybe even stairs, try different materials it won't look perfectly realistic
