My singleplayer world hangs every 10 minutes looking like i was on frozen time, every mob stops and every block destroyed gets back where it where.

Press F3 and check your FPS.

is not my fps, is is stable except when i load the world the first time

Strange, maybe it's your allocated ram?

i had 2gb allocated, when i changed to 4gb the problem persisted
