I think this change is unlikely to have much practicle effect: sugar and carrots are both easy to get (in quantity even without auto-farming) so the addition of the alternate pathway won't change the costs of horses much. (20 carrots vs 40 sugar to bring a colt from birth to maturity, 10 vs 29 to heal a max health [30hp] horse from one to full, and no difference in tamability increase between the two.)
Probably done as a matter of creeping verisimilitude (given the iconic nature of carrots as horse treats), rather than for it's effect on play.

I grew up hearing that particular critter called asses [jack- and jenny-], a habit of thought that has remained with me.
Agreeing with you on that due to the fact that donkeys were called that for centuries before the word became a swear word, ppl just started using it as a swear word so it turned into one just like many other words before they became swear words
