a Viking statue
House. Just house.
you can make so many things
Market square
stables
shops for any type of food products or professions
bar, tavern
crop fields
library
horse stalls
church/chapel
boats
training area for knights
a jousting arena (one of my favourites)
if you like fantasy you can make the home (or tower) of a wizard or magician
harbor/ haven
Try and give it some life, create (funny) stories, if you are able to use armorstands even better to add characters doing stuff

This is it! Whenever I build medieval, this is the way to do it. Castles are (imo) way overdone and many times medieval villages didn't have a castle.
When building what Squeeler suggested, don't be afraid to try use different woods. Oak, Spruce, Dark Oak, pair that with some of the deep slate variants for rooftops. Don't forget windmills in or near some of your fields either!

100% Thanks for the additions :)
