I personally want more food items, possibly more brewing items like a bat wing or something like that, but what do you guys want?

Personally I am an explorer at heart, I like to find interesting geography and build what i feel that specific location needs. As such I feel like a world-gen change to make traversing the world a bit more difficult to be very welcome.
As it is, I don't feel like traversing a mountain is traversing a mountain in many cases, it's just walking up and down a hill. Making mountains and hills more pronounced would make me happy.

Some changes to the terrain that makes specific biomes a challenge to go through, especially the caves!

I'd be very happy if 1.15 was "The Invisible Update":
☆ a restoration of the performance levels in vanilla to something like that with 1.10 & optifine
☆ fixing the various longstanding bugs (random 0-light blocks, leads popping off, mobs glitching into & through walls, black-hole behavior, ghost blocks, etc. etc. etc.)
[Reverting the showstopper changes to mechanics from 1.13 & 1.14 would be a welcome bonus.]
Not much for the marketing department to bally-hoo, but this would free them to tout MC:Dungeons (and provide continued employment for the RPG fans on staff).

also adding abilities for commands and datapacks, like the ability to add new blocks and entities, left and right click detection, and many more greatly needed changes of the internal invisibla behaviour

Hmm... Maybe some sharks would be nice (since dolphins have already been added), but as someone who has to update a personal resource pack with every new version, I'd rather just have this version be related to bug/performance fixes than to add more pointless things for me to skin. :P

Nether Overhaul. New mobs, new blocks, new armor/tools/weapons. Heck, maybe even some magic items related to the nether. There is so much potential with the hellish biome that they just haven't unlocked yet.

I want to see a solar eclipse, It would be an event that lasts a day and has a low chance of happening. Once it happens, the sky would turn blood orange and every single mob's strength would be increased. For example: Zombies could break down Iron doors, skeletons would have arrows with effects, creepers' exploding radius would double, witches would throw stronger potions, and spiders would be able to climb upside down or jump at you. There should also be an option to disable them if you are building in creative or something. Also there would be scary music, that would be great. Maybe even some new mobs that only spawn during solar eclipses.

I always thought it would be cool to have tougher enemies the deeper you delve into the world, or even something like forgotten beasts in Dwarf Fortress.

with milk, sugar, and cocoa already in game, it's surprising that so few of the food expansion/revision suggestions I've seen fail to include this essential food group.
[Ethanol, caffine, and nicotine may be prevented by the E10, but choclate ought to be allowed.]
(Not that this is more important than getting the performance back to reasonable levels, but — if we're listing stuff that's just fun — chocolate ought make the list)
