Dark oak with birch as a good one to go with it because of the contrast

Jungle log is nice, but planks, I pick oak.

I highly recommend using spruce or oak wood.

I would usually use either dark oak or spruce; they go great with medieval builds, and look like the 'normal' kind of expensive wood we see in real life.
However, I like using acacia wood as those orange shingles for roofs.

I love using spruce wood along with stone brick blocks. I use that theme in most of my buildings. Of course, any wood can look cool if used right. But seriously, just look at the spruce wood door. When it comes to doors, no wood can compete with spruce.

Anything if you use it right. I tend to use the darker woods (spruce/dark oak) for the main building and the acacia for roofing. It's how you build with it that counts.
