All the new end stuuf (except the new portals) pushed into a meta-end dimension leaving the original in its pristine glory.

Seriously, the point of the end is that it is supposed to be a resource poor largely empty space with just the few samll islands of limited materials.
If one adds a bunch of stuff to it, that 'vibe' will be lost.
[Yes, this is a variation on my argumentt that 1.16 should have introduced a meta-nether with only the bastions remnants protruding into the pre-1.16 nether as the same logic applies.]

WRT the various specifics:
New Ore: if added this should be a fork from rather than another tier on the armor/tool progression e.g. one can convert diamond gerar to either netherite or 'endite' versions. (An obvious buff would be gear that floated on the bottom of the void either not despawning or doing so only slowly. What the effect on a player in endite armor would be is open to question, but floating at this level would not be unreasonable.)

New Endermen relative[s]: [Don't know the dungeaons types: no comment] Adding an ecology to a meta-end that shared some properties (like water aversion and teleporting) could be interesting, but there would need to be function differences or it's just polar bears. (i.e. a cow that dies in water and teleports, but drops leather and beef is interesting for about thirty seconds beyond not having to transport it from the overworld)

New woods: If MS/Mj is going to keep adding functionally equivalent woods that differ only in color (and – sometimes – a bit in growth requirements) they should just take dyed/painted wood off of their never, ever, ever (like ever) list and admit they were wrong. [The Nether 'woods' being fireproof is an example of adding something beyonds wood_new_color ]

New Biomes and stone variants: at some point the degree of complexity of a new dimension rises to that of the overworld and coming up with biome/block ideas tha wouldn't make sense to just add to that dimension seems very difficult; unless the idea is to create a fully developed alternative to the overworld [which I don't see the point to doing]. A meta-end dimension needs a hook/gimmick (like the no water in the nether or the mostly void in the current end) to make it work onther than as an alternate overworld.

New weapon[s] / new structure[s]: maybe, need to be fleshed out (and need to somethng more than minor variations on current options without becoming eithre overpowered or too nitch) [Tall order, that]

New Boss: maybe, see new weapons/structures. ['Boss fights' strike me as inherently 'un-sandboxy', Jane as a single exception guarding a new dimension isn't badly disruptive of this. (The wither is player controlable and only acts as a gate to beacons: beating the Elder guardians only makes developing a monument easier. )]

New boss arena: Antithetical to the sanbox paradigm on which MC has built its success. [The trial chamber may well be a mistake IMO, but a single 'oopsie' may not kill the sandbox; adding more geometrically increases the risk.]

All of the features shown above sound great, but the End does deserve biomes. It's been the same for over 10 years, It deserves a change that will make going to the End more of an adventure instead of just a goal

i think new biomes and structures (with new loot) could be really cool, something kinda like the BetterEnd mod
