If this is mob not a monster, then mooshroom. If only monsters, then spider jockeys. If I had to choose between bosses, then Wither.

OK. I was thinking only monsters. But it doesn't have to be.

Creepers are certainly the most iconic, although I find Endermen more interesting in play.
Most of those listed have unique (or at least hard to replace) drops making utility quite circumstantial.
Based mostly on 'best design' (as in best from the point of game design), I'd probably say creepers edge out the competition.

I forgot to include phantoms. I play 1.12.2 with mods.

Endermen. Just..just endermen. Or slimes. I just really like endermen though.
