ruby ore it may have been taken out but it will always be the best ore in my heart

The ruby was never in the game. It can only be found in the files or in a mod or texture pack or resource pack or a data pack, A ruby ore has never been in the game or files

it was when it was being developed jeb however replaced the ruby ore with emerald because he is colour blind and kept mistaking it for redstone

Where did you see this? Jeb is not color blind, If he was everything will be wrong. Jeb was the one ehat put Jeb_ in some files, If he was color blind he wont be able to use lack easily, The ruby ore has NEVER been in the game.

you are right jeb is not colour blind its DinnerBone who is colour blind here is a small extract from the minecraft wiki

I was going to vote Gilded Blackstone, but my computer is not displaying that option. So I guess I gotta go with Quartz. It's used to make Observers and other, useful things, and the blocks look like Marble.
My Second is Redstone. Redstone Ore itself is a redstone component. Hitting one temporarily creates light and power.
Iron is also useful, but a big iron farm will get you more iron, and it doesn't have to be smelted.
Diamond creates top tier gear (and technically still does in 1.16), but diamond stuff can be easily purchased from villagers, and ex-zombies practically give them away!

I would say emerald, because it's really rare in the game and it's more valuable than diamond.. :)

Actually, diamonds are way more valuable since they cannot be farmed. Emeralds can easily be farmed by trading with villagers.

Quartz, because it's the easiest source of xp out of all of those. Which, after a point, is the only thing I want or need. Dump the actual worthless resources and you get xp on par with redstone just cheaper to find.
After that, in no particular order:
Iron you can never have too much of. 10/10 Great for anything industrial.
Redstone is fine, but I don't have much opportunity to use it in a survival setting. Also, you get a hecking ton of it and blocks of it start to fill up chests like crazy.
I never need coal again after about 5 mins of mining. I don't do a lot of smelting. If I do, I use lava anyway.
Diamonds are useless, shiny rocks after a point and no amount of mining can change the fact that you never need more than a stack (unless you're sharing with friends which I totally recommend bc they'll love you for life and be in your debt for an item you can't even use for anything useful).
Ancient debris is debatable but I don't want to get into that rn (mostly bc I need to really get down to business with it).
Emerald ore is kewl to find, but let's get real here: 1.14 made emeralds even more worthless. (also I hate mining in mountain biomes bc of the silverfish eggs)
Gold is useless. nuf said. I did use a bunch of apples to destroy the emerald economy (the reason for the above opinion) through villager curing, but that's another story.
Lapis is great. Enchanting is my favorite pastime. Unfortunately, you get so much more than you need from the ground and it ends up being number two on my list of Resources That Pile Up For No Good Reason after redstone.

Genuinely absolutely love Iron, so useful for Redstone, beacons, and building (if you use it right).
Diamond is definitely great because you can get ridiculously strong tools and armor through it, not counting Netherite
Lapis is also really good for enchanting

Maybe they wouldn't last forever? Like the real life equivalent of the torches go out eventually unlike the minecraft ones.

If you asked any Minecrafter at a mid stage in the game, which ore they wanted one of, they would say diamond, but if you had 1000 diamonds the answer would be different.

I have about 650 diamonds in storage currently, it comes to a point where you realize diamonds aren't near as useful as you thought, even though they will always give you a thrill when you find them underground. I love iron, it is an extremely abundant resource and thus one of the easiest ways to build full-size pyramids that can enable you to mine at ridiculous speeds. Iron can also be used for golems and the enormous railroads I am ever-expanding across my world, or for unbreakable doors if you play on Hard difficulty, like I do. Assuming you play pre-1.9, iron is an essential element for travel, since it is used to craft minecarts which are one of the fastest modes or transport in the game. Iron's usefulness across many areas of the game is absolutely unparalleled.

I question the power of ore to give me a useful amount of gold. Also, steak and porkchops are on par with golden carrots as the best food sources.
