I'm a beginning pixel artist and just wanting to have some fun and improve along the way. Any tips for starting out with pixel art?

Start simple.

Spritecraft and McEdit.....*drops the mic*

Tip: Include detail, but know when there's too much or two little. Add texture to the image being created with said detail.

Shading is key. Rather than just use lighter and darker versions of the same colors, make your shadows and highlights slightly different colors. For instance, if your base color is blue, make your shadows a bit purple, and your highlights a tinge more green.

But seriously, I personally found this pixel art tutorial on outlines to cover several tips that are easy to understand, introduces you to the art of pixel art and can be applied immediately to improve your earliest work and mastered over time. Honestly, some of these tips can improve your Minecraft builds too!
