I don't have screenshots as I move servers and worlds often, but my top options would be ruined castles, mini-palaces, and big trees.
I plan to make a hanging house (one that is built off a cliff or wall and suspends like a solid hook or an icicle), but doing this in survival is hard and makes me nervous, one creeper blast and you fall to your death. Such a house would definitely be made of amethyst so it resembles a huge shard.
