A technical update would be a good priority. They're probably going to start working on that while hyping the next big release like an end improvement and biome-specific details again. I would love to do data-driven everything. here are some examples for how it would work:
-multi-core support since that would make the game run much faster without needing significant cutback
-general culling and math improvements to reduce calculations needed
-significant reworking of blocks to define custom blocks. Properties include:
-base mining speed(s?)
-loot table
-model used, defaults to block id
-model of hitbox (hitbox =/= visual model), defaults to full block
-if applicable, block states and acceptable values
-item properties (compound tag)
-item id (defaults to same as block id unless specified, a value of "" (null) means block has no item form)
-if a custom item item with the given id is defined, its properties will override other properties listed here.
-item model (defaults to isometric render of block model if none)
-inventory section (hopefully including support for additional tabs)
-if no other data in custom model, block will be a standard block item.
-these blocks can be included in custom dimension generation, structures, and block tags.
-further properties of these blocks can be added with block tags and loot tables
-these blocks automatically get corresponding items unless specified
-custom items, data-driven and full of customization. Definable properties include:
-item model, defaults to same as item id
-crafting recipe
-default NBT
-default attributes
-enchantibility
-applicable enchantments and enchantment weights
-durability
-"uses"
-uses define different actions a tool could perform like attacking with a sword, equipping on a slot, or mining a block.
-defines things like block tags or parameters when breaking blocks, durability taken when action taken, mining speed, etc.
-can detect a bunch of stuff
-block tags are now used to group blocks by preferred tools, so your new stones will be mined with pickaxes
-custom enchantments can also be defined, however any effects must be factored in as item use cases, loot table modifiers, or functions.
-player nbt, or at least parts of it such as item metadata, are now editable.

Lowkey, the End Update would be one of the best things for the game. It'd be the perfect update to add content for players that aren't satisfied with the game's current sense of difficulty and progression by adding high risk high reward challenges. You'd fix the problem that Minecraft has where many players, upon reaching the end game, don't know what to do anymore.
Bonus points if the Dragon fight gets improved to match Bedrock.

I think its time for a performance update for java clients and servers.
I mean the game has been kind of broken since 1.12 and they keep adding stuff while barely touching on the fundamental issues. Yes 1.16 has improved performance a bit upon 1.15 and 1.14, but it would be nice if we didn't have to keep throwing faster (per core) CPUs in our servers to keep the TPS up. I remember the days of hosting MC on an Athlon 64 3200 without it breaking a sweat, good luck with that now!

In the other side, data packs ARE a very nice addition.
