Well the datapack language is not Java, and the datapacks you make don't even use it they just use a json generator to make a single file.

Its not simple at all, Java is a seriously difficult language and even once you have learned Java modding is a whole other thing. There are not really video tutorials that I know of, most people learn just by looking at other people's mods and reading the documentation
