I've seen a lot of epic builds in Minecraft, of people building HUGE and amazing castles and stuff. How do they do it, and where do they learn how to? Whenever I build, the best I ever get to is a simple wooden house. Any tips on improving building skills in minecraft?

I have little to know experience, considering that I started playing Minecraft last march.
However, if you are intelligent enough, you will be able to confidently confide yourself within single player, and eventually, with effort, detail and build to perfection, observing buildings in real life, and absorbing information. Now to build efficiently, I use a set equation that makes it a lot easier.
(Build)=#(walls) x (halves, sides, quarters) = (Formation) x (Repeat)

It's mostly experience, you will have to put down an insane amount of time if you want to become a real professional, as goes for almost anything.
challenge yourself to build bigger and have patience.
expanding your visual library is really important too, just look at pictures, anything from art to food to architecture.

Is simple really they just practiced and practiced. I'm sure you can do it eventually ( I can't even make a simple wooden house). But if you want a tip try making a circle in a picture editing program then make it in minecraft(remember 1 pixel is 1 block) is useful for making towers.

I put mine in case you want to use it:http://www.mediafire.com/download/fsa4avp05gwimus/Circle.schematic

It doesn't take time, you just have to be really really good and use worldedit well. If I played minecraft as a job i could probably churn out 1 build a day.

Honestly, its quite simple if you just plan it out and are willing to take the time to do it. Someone on the server I like to play on makes Mega-Builds a lot and he actually made a tutorial on it. If you would like to check it out then here it is: http://www.planetminecraft.com/blog/how ... r-dummies/

Create your own bukkit server, add plugins and open it whenever you want to build

If your looking for a good explanation on how to build epic (Medieval only) then check out Madness 64 on youtube. He has a bunch of video discussing how he does it and such.

Eh... I think how they do it is just confidence, determination, and patients. Stuff like that.
Try that.

Youtube tutorials. Also for landscaping use WorldPainter and WorldMachine. For big buildings use this tutorial
