If you want to do //replace to get rid of an block completely, you would do //replace 63 0, but does that work with signs? I tried with other blocks and it worked just not signs. Please help.

So basically you should use //replace 63,68 0

There are two metadatas for signs,
Free-standing: 63
and
Wall-mounted: 68
Free-standing: 63
and
Wall-mounted: 68
