I don't think I can help out much, considering that I don't know what kind of minigames you are making (more specifically, I don't know the theme of the minigame) and that I am a newbie... but how about:
- Giant slime/magma cube
- Armored skeleton/zombie
- Skeleton ninja (Black leather armor, generic.movementSpeed Base 0.33)
- Skeleton horsemen
- Splitting zombies
