I'm not sure how vanilla the server is you're looking for, but I've got one I play on to recommend.
WinterCrest ( play.wintercrestmc.com - on PMC)
We do have a few plugins to make things smoother for players (Essentials, most notably), but it feels very vanilla to me :)
We've got a 120k world border that leaves you with loads of space for your projects.
Just a suggestion.
