Nice idea.
Have you ever considered playing on a server though? I happen to know a rather mature US server which is pretty active and can basically be considered "vanilla+". So: it provides a survival game play but enhances on that with several of their own customizations (most of it is custom coded).
Now.. I myself no longer really play on that server for personal reasons (nothing too negative) but the reason I mention it is because I know that there are more whole families playing there and having fun. I played on said server for around 4 years or so and well... it beats having to pay $10/month for a realm ;)
The best part is that you can easily meet up with others players but without having to worry about griefing (long story but the server either allows you to claim your own 60x60 sized residence in a town world or start building in the (never resetting) survival world where you either claim ("establish") an area or simply go somewhere free and start building.
Food for thought perhaps? You'll have more options to protect your own work, have fun and as said: meet up with others.
Note: the only reason I actually recommend this server is because the whole setup is very serious. A nice PG friendly environment where plenty of players are having tons of fun. Also because I know at least 2 other families who play there (along with many more players of course).
If interested then drop me a PM and I'll point you to it (they have a PMC entry). I'm actually not sure if I'm allowed to mention server names but it doesn't matter because even if I am allowed then I still prefer PM because I don't want to advertise.

This is super cute and a fantastic way to bond with your kiddos. We don't have any seedlings of our own yet, but I wanted to pop in and wish you both luck on your adventures! I'm sure you'll find the right people :3
