Plains, nice and simple.
Deep dark with an Ancient City, I get Loaded and I get a Friend that Appears every time I Annoy It

If hether is being considered, I'd pick nether wastes (assuming fortress & attic don't count)
Warped Forest > Crimson Forest grrr
Cherry Grove or Taiga. They have some of the best scenery in any biome in the game.

I want to say I would live somewhere fantastical, but most of the fantasy-inspired biomes have a huge caveat in the form of a super threatening hostile mob (the Warden of Creaking come to mind, both from wonderfully made-up biomes). I think something basic would be best; perhaps a cherry grove, as other commenters have said, or a taiga...
Btw my choice would be in a cherry grove by a lake
