Sheep is an anomaly, just like fish. English isn't regular. But while there are quite a few words that use the singular form for the plural as well, there are none that use the plural for the singular (at least not that I know of). I'm not saying English isn't confusing/weird/irregular.

I would explain it like this:
"Peeper" comes from "to peep" which is the sound they make. It's not really their species name, but more like their job's name.
So, if there is only one bird that peeps, it's one peeper, right? Like photographer: if there is one person who takes photos, it's one photographer.
And if there are more than one, there are some peepers or photographers.

At least in the vernacular English, species names are typically not capitalized--I would therefore assume that if it were a species name the creatures would be called a peeper(s) rather than a Peepers.

The official description says "It's Peepers!". The use of singular "it" implies that "Peepers" is the name for one lil birdy. Still, I want to call him just Peeper ( ・ ▼ ・ )
