Well, ultra lets you use multi-core and other advanced stuff. For a normal computer, I'd recommend ultra if it has more than 1 core.

I use ultra because it has more options.

What kind of options? Would Standard be the best bet, because I don't use the fastest computer out there. It's not bad, but it's not a supercomputer.
