Hi there! I'm James, 28 years old :) I used to play Minecraft a while back, and I’ve recently decided to revisit it so I can play together with my older son. I'm hoping it might help us bond a bit more. We'll be playing on our phones, so I’d really appreciate some advice on which version to download. I prefer the classic Minecraft experience.

If your on phones, you'll not be able to use java (the original keybaord & mouse minecraft version) [AFAIK, I'm 'old skool' and play on a desktop.]

If you're used to java, expect to be surprised by some differences (particularly in more technical area like redstone & mob spawning) as well as some very large changes to things like water mechanics & oceans / villagers / the nether / biomes & altitude limts etc. [You not said what release you used to play; those are the main areas changed by 1.13/1.14/1.16/1.17-19 respectively.]

And sometimes with industrial and dragon mods. Something like that)

Recently, I've been playing web games here https://powbet-it.net/ The site is quite good, with a fairly large selection of games and cool rewards. I advise you to try it, it helps to reduce the time while waiting for the harvest to grow on the farm)

The first version I played was the PC Gamer demo (1.3 something)… hard to remember how things worked that far back.

You're in for a massive set of changes, I think when you last played farmland still reverted to dirt when just walked upon.

Oh yes, it was most annoying when I accidentally stepped on the cultivated land) I had to take a hoe and do it all over again. But I liked it, making big farms. Back then, I sometimes played on servers and found friends (adequate ones) and built small settlements with farms and mines.

Since you said you are playing on mobile (phone), You can go to the appstore to get minecraft. when you download it, it will be the most modern version.
This version is referred to as "Bedrock" addition and It runs on pretty much anything (Xbox,PS2-5,ipad/tablet,iphone,PSvita, etc...)
If you want a more classic experience, You can search Planet minecraft for bedrock addons, and how to install them!

if you are playing on your phones you should download bedrock because java is not on phones

Not exactly sure of which version would provide the experience you're after, but I'd say some of the newer updates are pretty nice as they offer something extra to grind for, and some exciting combinations! Things such as new biomes, armour trims and terrifying mobs, it makes for some great adventuring. c:
