Firstly, I think your sails are excellent, really superb! The rigging is good, too, but could use a tad more! As always, the stern is lovely, and very neat as well; I can never get mine to look that neat!
I disagree with Destruduktiva on the hull. I think it is great, and from what I remember in game, the interior is nice, too. It is really hard to do interiors in Minecraft, as you have so many fiddly little instruments that are annoyingly difficult to achieve in blocks. THe trick is to make it nice and cosy and clustered, i.e I normally complete my interiors by throwing down a load of pillars, planks, tables, chests and the odd capstan.
I'm really sorry, but I lied. I am going to make a bit of criticism. It's the bow. I've been studying SOTL bows for a while now, as I draw and paint them as well as build them in Minecraft. I am a massive hypocrite for saying this, as none of my bows do this, but...
The bow on your ship is long and thin, at least the bottom bit is. The curve should meet the main hull almost exactly at the water line, if not before it. The curve of the bow should also be the colour of the bottom stripe of the ship, in most cases, black (why did you put the ship so high up in the water?), so it looks like the stripe curls upwards. Then just curl up the other few stripes and add the fences as you rightfully did.
Sorry to be so judgemental there, and I'm sorry for taking the wind out of your sails a bit (MLGPUN). I was trying to perfect an otherwise perfect ship. Well done, great build.

edit; you got most of the basics down with this ship, the dimensions are quite allright, the hull organics are allright (here I'd suggest using slabs as well) and your sail technique is pretty good, there are some minor flaws though. The rigging is also allright but it could use some more to it. Mizzenmast shouldn't really be 2 blocks thick, and the tiller to the rudder should be one deck up, on the lower gun deck, not the orlop. The length of the boats is enough to justify them being wider, like 5 wide. Also the ship in general could be a bit wider. Would also give you room for more window space at the transom. The anchor cable should not exit out of a gunport, but the hawseholes. I think that you may have forgotten yourself when doin the spritsail, as the yard for it is at an angle of 5-5-5 when all the other ones are 3-3-3..
I would suggest studying interior layouts, now this is something you'll have to dig deep for, there isn't all that much on the internet. Lastly, I'm also suggesting going over to conquest rp, there's just so much more to it that you could do...
