I start with base colours, then I add details in one dark and one light colour for the shades and highlights. When I'm satisfied with the overall composition I finish it by smoothing out the shading with in between colours.

so for each part you mainly use 3 main colors and after those you use transitionals?

Pretty much yeah, it makes mapping out the skin in the early stages a lot easier. Though, for the smooth shading I usually use transparent brushes, normally set to 30% opacity. I do all this in Photoshop btw.
