this was just because 2 things, 1. the outline doesnt match in game, so he made it match and 2. it fits in with the blocky style.

No, it doesn't "fit in" with the blocky style. This looks less like vanilla and more like voxel art. If anything, Mojang changed the model but forgot to change the outdated outline. Take a look at section three at this guide.

In that example, they go from 3 elements to 13. My model uses 5. Cauldrons, for comparison, do use 13 elements. 14 if they're filled. Unless you're filling a chunk with them, you're not going to notice a performance impact.
While that guide gives decent general tips, they're not laws, and some aren't even consistent with the actual game. In the end, it's down to personal preference. Since lecterns are the only block in the game that uses both tilted and straight elements in the same model, they looked out of place to me.

Oh, and the reason Mojang didn't make the outline tilted is because they couldn't. There are so few blocks with tilted parts that it isn't worth the time to implement support for tilted outlines. For blocks that are exclusively diagonal (sugarcane, wall torches, grass), a simple cube shape looks good enough.
