as an italian, i really have no idea there's too much choice ._.
though i think pecorino, scamorza and ricotta are pretty good

Gruyere or Ementall
Camembert, followed by parmesan.
I'm not a fan of cheese usually, but an exception is parmesan. I just really love parmesan.

I've had a lot of cheeses... Havarti is top tier, you should try it if you haven't. It's soft, creamy, buttery and tangy. Also smoked gouda is delicious. And try butterkäse, too.
